This is my entry for the @hekagoodfoods recipe contest (which closes in 2 hours, so I'm really coming down to the wire, but as much as I love winning, you bet I prioritized this over everything else I had to do right when I got back in town!)
If you haven't tried the #hekagood bars, they're super chewy and almost caramel-like in texture. So, that lended itself perfectly to the chewiness of a Samoa. And if I don't win this, at least having 12 of these crazy good cookies is a win. 😉
Here's the recipe:
- Put 8 tbsp chilled salted butter
- 1 large egg
- 2 tsp vanilla
- 2 tbsp erythritol
- 1/4 cup brown sugar substitute
- 1/4 cup almond flour
- 1/4 cup coconut flour
- 1/4 tsp salt in a Ninja/NutriBullet
- Combine ingredients and pulse until smooth.
Now it's time to bake the cookies. I used a greased whoopie pie pan, but you can use a normal cookie sheet, too. The dough will be quite sticky, but if you drop a spoonful, flatten it slightly and cook for about 20 minutes at 350, you'll be set. Allow the cookies to cool.
Spray a large frying pan with coconut oil, and melt 1/4 cup of salted butter. Add 1 tsp vanilla, 1 tbsp powdered erythritol and 1/4 tsp salt. Then add 3 Heka Good Chocolate Chunk Bars and melt over a LOW heat. Once they're melted, add 1 cup of shredded coconut. Stir well, and scoop evenly onto the cookies.
Finally, drizzle @lilyssweets chocolate on top and pop in the freezer until it hardens. Then dip the bottoms, return to freezer until it hardens and you have your Samoas! Enjoy!
