Pumpkin Whoopie Pies

Loving this fun new recipe by @livingleanwitherin featuring our seasonal Pumpkin Pie bars!

Pumpkin Whoopie Pies

Makes 5
Preheat oven to 350 degrees.
Crumble 2 pumpkin pie bars into a bowl. Add 3 TBS almond milk. Microwave 30 sec.

Add to a small blender with 1 egg, 3TBS coconut flour, 2 TBS lakanto monk fruit golden sweetener, 1/4 tsp baking powder, pinch pumpkin pie spice.

Blend until smooth. Let sit 4 min to thicken.

Spoon 10 circles about silver dollar pancake size onto a silpat or parchment.

Bake for 8 min.

Make a cream cheese frosting using cream cheese and powdered lakanto sweetener (or use coconut butter or a buttercream). Frost one under side of a cookie. Sandwich with another.
